The day I made this pasta dish was supposed to be my day off from work. Instead, it turned into one of those surprisingly busy days at home.
There is a hilarious idea that being your own boss means endless vacations—that you can simply close the shop, travel whenever you want, and somehow the business will magically support itself.
Well, that was definitely not the case that day.
Instead, my “day off” looked rather industrious. I was so busy working from home that I somehow skipped breakfast. By about 11:30 a.m., my stomach reminded me of that little mistake—and it was not asking politely.
A Quick and Satisfying Homemade Lunch
Fortunately, I already had a large portion of leftover handmade pasta from the night before. So, instead of spending time preparing an elaborate meal, I simply reheated the pasta, topped it with some shredded cheese, and sat down to enjoy it.
Just like that, my stomach and I were both happy—and I was ready to get back to the rest of my day.
Sometimes, a good meal does not have to be complicated. In fact, having something homemade already waiting in the refrigerator can make a busy day so much easier.
Why Pasta Is One of My Favorite Comfort Foods
When it comes to comfort food, pizza and pasta are usually my go-to choices.
First of all, both are relatively quick and easy to prepare. Secondly, they can be made in so many different ways depending on what you have available at home. And, of course, there is always the option of ordering takeout when you simply do not feel like cooking.
That said, I usually prefer to cook at home because I am very selective about the ingredients and foods I eat. Cooking for myself gives me more control over what goes into my meals, and there is something satisfying about putting together a simple dish in my own kitchen.
Sometimes Simple Food Is Exactly What You Need
Of course, not every meal needs to become a big production.
Sometimes you are hungry, busy, and ready to move on with your day. In those moments, a bowl of warm pasta with cheese can be exactly what you need.
And if you are having one of those days when cooking feels like the last thing you want to do, there is absolutely nothing wrong with getting takeout. If you have a few extra dollars to spend, order something you enjoy, bring it home, sit down, and actually take the time to enjoy it.
Ultimately, comfort food is not just about the food itself. It is also about giving yourself a moment to slow down, eat something satisfying, and enjoy a little comfort in the middle of an otherwise busy day.
Even when you are your own boss, apparently lunch still has to happen.
